Higher fiber lower sugar pumpkin muffins Ingredients:
1 1/2 c flour |
1 tsp baking soda |
1/2 tsp baking powder |
1/2 tsp cinnamon |
1/4 tsp sea salt |
1 tsp allspice |
1/4 tsp nutmeg |
120 g cane sugar |
15 oz pumpkin |
15 oz white kidney beans |
1 tbsp ginger |
1 egg |
1 c pecans |
Directions:
1. Puree beans with 1/2 cup water, bake at 375 for 15 minutes, more at 300 if necessary. |
