Yet another variation on my muffin recipe. Can you tell I love muffins?! Ingredients:
2 cups bran flakes |
1 1/3 cup skim milk |
1 cup whole wheat flour |
1 tbsp flax seed |
1 tbsp baking powder |
1 tbsp cinnamon |
1/2 tsp salt |
1 cup pumpkin, canned no salt |
1/4 cup egg substitute |
1/2 cup sugar |
Directions:
1. Mix all ingredients together and let sit 5 minutes. 2. Divide into 24 muffin cups 3. Bake at 400 F until tops spring back when touched |
