1 cup canned pumpkin |
1/2 cup soy milk |
1/2 cup applesauce |
3 tablespoons molasses |
1/2 cup pumpkin seeds |
1/2 cup raisins |
Directions:
1. Mix together flour, sugar, baking powder, salt, and spices. Mix separately pumpkin, soy milk, applesauce, and molasses. Combine together wet and dry ingredients. 2. Fill muffin cups two-thirds full. Bake for 18-20 minutes at 400 deg., until a toothpick inserted comes out clean. |
