My favorite pumpkin muffins, modified from a recipe in Joy of Cooking. I use homemade pumpkin puree (just bake pumpkin halves for 30-60 minutes, until the flesh can be scraped out; then puree the flesh), which really cuts down on the sugar and sodium in the final recipe. Ingredients:
1 3/4 cups flour |
2 tsp baking powder |
1 tsp cinnamon |
1 tsp nutmeg |
1/4 cup sugar |
1/2 tsp salt |
1 cup pumpkin |
3/4 cup milk |
2 tbsp butter |
2 eggs |
Directions:
1. mix all dry ingredients together 2. mix all wet ingredients together 3. just mix dry and wet 4. bake at 350 for 30-35 min |
