Moist Pumpkin Muffins. I love this recipe because the muffins are sooooo moist. You can taste the spices and the pumpkin, but they are not overwhelmingly sweet. I got this recipe from a woman at my church. I'm addicted!! If you plan on making these regularly, buy the biggest tub of honey you can find, because this recipe uses a lot. Ingredients:
2 eggs |
3/4 cup oil |
3/4 cup honey |
1/4 cup maple syrup |
2 cups canned pumpkin |
1 tablespoon vanilla |
3 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
1 1/2 teaspoons baking powder |
1 tablespoon cinnamon |
1 dash nutmeg |
Directions:
1. preheat over to 325 degrees. 2. beat together first six ingredients. 3. add dry ingredients and beat well. 4. drop into muffin tins. 5. bake for 18 minute. |
