Moist, delicate muffin with great autumn spice flavors. Ingredients:
2 eggs, beaten |
1 1/2 cups evaporated milk |
15 ounces canned pumpkin |
1/2 cup oil |
1 cup applesauce |
3 cups flour |
3/4 cup wheat germ |
1 1/2 cups oats |
1 cup sugar |
3 tablespoons brown sugar |
2 tablespoons baking powder |
2 teaspoons cinnamon |
1/2 teaspoon nutmeg |
1/2 teaspoon ginger |
1/4 teaspoon clove |
1 teaspoon salt |
3 tablespoons maple syrup |
1/2 cup brown sugar, packed |
1 teaspoon cinnamon |
2 tablespoons butter |
1/2 cup walnuts, chopped |
Directions:
1. 1. Mix wet ingredients well, then add dry ingredients and mix until moist. 2. 2. Fill greased muffin pans 3/4 full and pat on the topping. 3. 3. Bake at 400 for 18 - 22 minutes. 4. 4. Serve hot out of the oven with butter or cream cheese. 5. 5. Enjoy! |
