This is a combination of two recipes I had combined a long time ago. I make these frequently - to use up my jars of home-canned pumpkin! These freeze very well. Ingredients:
2 cups canned pumpkin |
2 1/2 cups flour |
1 3/4 cups sugar |
3 eggs |
1 1/3 cups oil |
1/4 cup water |
2 teaspoons vanilla |
2 teaspoons cinnamon |
2 teaspoons baking soda |
1/2 teaspoon salt |
3/4 cup mini chocolate chip |
Directions:
1. Combine all ingredients in mixing bowl. Mix until moistened. 2. Put in greased muffin tins. 3. Bake at 350 degrees for 22-25 minutes. |
