Warning! These are not your traditional muffins. For those of us who are watching our weight, it is a nice little, one Weight Watcher point treat. I got the recipe from my Weight Watcher's leader. The first time I made them I was disappointed, but then I realized that I was expecting them to have the same taste and texture as a regular muffin. So, with that being said, enjoy! Ingredients:
2/3 cup non-fat powdered milk |
2 teaspoons pumpkin pie spice |
1 teaspoon cinnamon |
6 tablespoons flour |
2 tablespoons sugar |
2 eggs |
1 cup canned pumpkin |
1 teaspoon vanilla |
1/2 cup grated carrot (about 7 baby carrots) |
1/4 cup raisins |
Directions:
1. Mix eggs and pumpkin thoroughly. 2. Add all other ingredients. 3. Divide among 12 muffin cups. 4. Bake at 350 degrees for 15 minutes. 5. One Weight Watcher's point per muffin. |
