These have a really nice flavor and are nice and moist. I am guessing as to how many this recipe makes, so I am sorry if I am wrong. Ingredients:
4 eggs |
2 cups sugar |
1 1/2 cups oil |
14 ounces pumpkin |
3 cups flour |
1 tablespoon cinnamon |
2 teaspoons baking soda |
2 teaspoons baking powder |
1 teaspoon salt |
2 cups raisins |
Directions:
1. Beat eggs slightly. 2. Add sugar, oil and pumpkin. 3. Beat thoroughly. 4. Add flour, cinnamon, baking soda, baking powder and salt to creamed mixture. 5. Blend until smooth. 6. Stir in raisins. 7. Fill muffins tins 2/3 full. 8. Bake at 400 degrees for 15 minutes. |
