Gifts from the Christmas Kitchen Ingredients:
4 ounces cream cheese, softened |
2 tablespoons brown sugar |
1 1/2 teaspoons maple flavoring |
2 cups flour |
3/4 cup brown sugar |
1/2 cup chopped walnuts |
2 teaspoons baking powder |
1 teaspoon ground cinnamon |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
2 eggs |
1 cup pumpkin puree |
3/4 cup evaporated milk |
1/4 cup vegetable oil |
2 teaspoons maple flavoring |
Directions:
1. For cream cheese filling combine cream cheese, brown sugar and maple flavoring in a small bowl until blended. Set aside. 2. For muffins combine flour, brown sugar, walnuts, baking powder, cinnamon, baking soda and salt in a large bowl. 3. Combine eggs, pumpkin, evaporated milk, oil and maple flavoring; mix well. 4. Add pumpkin mixture to flour mixture, mixing until just blended. 5. Spoon into 12 greased muffin cups. Dollop 1 heaping teaspoon of cream cheese filling into center of each cup, pressing into batter slightly. 6. Bake in preheated 400 oven for 20-25 minutes or until done. |
