pumpkin loaf... change flavour by substitution... (i.e. banana bread, etc.) Ingredients:
3/4 cup splenda granular |
1 1/2 cups maple grove farms reduced fat pancake mix |
1/2 cup pure canned pumpkin |
1/2 cup egg substitute |
1 tablespoons brown sugar |
1 teaspoon cinnamon |
1 teaspoon baking soda |
2 teaspoons vanilla |
Directions:
1. Preheat oven to 325 degrees. Spray a 5x9 inch loaf pan with non-stick cooking spray and set aside. In a medium bowl, combine the Splenda, pumpkin, egg substitute and vanilla. Add the pancake mix, brown sugar, baking soda, cinnamon; mix with a spoon until combined. Pour into prepared pan and bake for 35-45 minutes . Cool for 10 minutes in the pan, then dump it out onto a wire rack to finish cooling. Cut into 10 slices. |
