This pumpkin pie makes its own crust. Couldn't be easier! Ingredients:
2 eggs |
1 teaspoon salt |
1 1/2 cups pumpkin puree |
3/4 cup white sugar |
2 tablespoons butter, melted |
1/2 cup biscuit baking mix |
1 (12 fluid ounce) can evaporated milk |
1/2 cup water |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie pan. 2. Place eggs, salt, pumpkin, sugar, melted butter, baking mix, evaporated milk, and water in a blender. Mix on low speed for 2 minutes. Pour mixture into greased pie pan. 3. Bake in preheated oven for 45 to 50 minutes, until set in center. |
