Ingredients:
1 3/4 cups whole milk
6 tablespoons egg substitute
1 cup sugar
15 ounces pumpkin
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1 cup fat-free evaporated milk
1 teaspoon vanilla
Directions:
1. beat eggs and sugar.
2. add milk.
3. heat in double boiler until it coats a spoon back.
4. cool.
5. add remaining ingredients.
6. chill.
7. freeze in ice cream maker.
