My grandmother called this George Washington Cake. I got the recipe originally from one of those supermarket booklets, copied it out and then have never been able to relocate the original recipe. Ingredients:
2 1/4 cups flour |
1/2 cup sugar |
2/3 cup butter |
3/4 cup pecans, chopped |
1 1/2 teaspoons ginger |
1 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/4 teaspoon salt |
1/4 teaspoon clove |
3/4 cup buttermilk |
1/2 cup light molasses |
1/2 cup canned pumpkin |
1 egg |
Directions:
1. Heat oven to 350. 2. Coombine flour and sugar. 3. using pastry blender, cut in butter until mixture resembles fine crumbs. 4. Stir in pecans. 5. Press 1 1/4 cup of crumb mixture into bottom of ungreased 9 square pan. 6. To remaining mixture add ginger and rest of ingredients. 7. Pour evenly over base. 8. Bake for 40-50 minutes. |
