Pumpkin Ginger Cranberry Muffins Ingredients:
1 1/2 cups flour |
1/2 cup wheat bran |
1/2 cup soy protein |
1/4 cup applesauce |
3 tablespoons oil |
1 tablespoon ground ginger |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
14 ounces pumpkin |
1/3 cup water |
1 tablespoon baking powder |
1/2 tablespoon cornstarch |
1 1/2 cups cranberries |
Directions:
1. Mix dry ingredients. 2. Mix in wet ingredients. 3. Bake at 400 degrees for 30 minutes. |
