Appropriately chocolaty, somewhat lower in fat, dense, moist .. the recipe is from The Cake Mix Doctor. Perfect for Autumn! Ingredients:
1 18.25 oz plain german chocolate cake mix |
1 15 oz can pumpkin |
2 large eggs |
1 t. pure vanilla extract |
1 t. ground cinnamon |
1 cup semi-sweet chocolate chips |
Directions:
1. Preheat oven to 350. Place cake mix, pumpkin, eggs, vanilla, and cinnamon in a large mixing bowl. 2. Blend with an electric mixer on low speed for 1 minute. Stop the machine, scrape down the sides, and increase the mixer speed to medium - beat 2 minutes more. The batter should look thick and well combined. 3. Fold in the chocolate chips. 4. Spoon batter into paper lined muffin cups, filling each liner 2/3 of the way full. 5. Bake on the center rack for 20 to 25 or until toothpick inserted comes out clean. 6. Place on wire rack to cool 5 minutes, then remove muffins. 7. Allow to cool 15 minutes before serving. 8. *add 1/2 cup minced sweetened dried cranberries for additional flavors and textures |
