Light fruitcake that has become a firm favourite with family and friends. Ingredients:
3/4 cup butter |
2 tablespoons golden syrup |
1 cup sugar |
500 g mixed fruit |
2 eggs, well beaten |
1 cup cooked mashed pumpkin |
1 cup self-raising flour |
1 cup plain flour |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
1 pinch salt |
Directions:
1. Melt butter, add golden syrup, sugar and mixed fruit. 2. Stir until sugar is dissolved. 3. Remove from heat, add beaten eggs and mashed pumpkin. 4. When cool, add flours, spices and salt. 5. Place in a greased square cake tin and bake in moderate oven for 90 minutes. |
