Ingredients:
4 cups of water |
1 lb pumpkin, peeled, seeded and diced |
2 eggs, beaten |
1 cup all purpose flour |
1tsp pumkin spice |
1 tsp cinnamon |
1 tsp nutmeg |
2 tablespoon brown sugar |
1 tsp baking powder |
1 tsp salt |
2 cups cooking oil |
Directions:
1. Bring water to boil in saucepan, add pumpkin, cook until tender, about 45 mins. It's easier to cook pumkin in skin, then peel. Drain well. Mash pumpkin into mixing bowl and add eggs. Stir in flour, spices, sugar, baking powder, and salt. beat well with spoon. heat oil in large skillet or any frying pan. Drop rounded spoonfuls of mixture into the hot oil. fry, turning once, until golden brown, about 3 mins. Drain on greasepaper to get rid of excess oil. makes about 48 fritters. |
