Pumpkin Fritters

These are a great add to the Autumn table.
Ingredients:
3 cups canned pumpkin
2 cups flour
2 eggs, slightly beaten
1 tsp. kosher salt
2 tsp. baking powder
2 tsp. pumpkin pie spice
1 tsp. nutmeg
1 tsp. cinnamon
oil to fry
powdered sugar to coat
Directions:
1. Put oil in large pan and heat to 350 (I never use a thermometer for this, just put the end of a wooden spoon in oil and if it bubbles all around the spoon, the oil is hot enough)
2. Add 1st 8 ingredients to mixing bowl
3. Mix until completely blended
4. Drop mixture by tablespoonfuls into oil
5. Fry until golden brown
6. Drain on paper towels
7. Roll in powdered sugar
