Yummy! Ingredients:
1 cup oats |
2 1/2 teaspoons baking powder |
1 teaspoon cinnamon |
2 egg whites |
1 tablespoons milled flax seed |
2 teaspoons vanilla |
1 cup pumpkin |
4 ounces vanilla yogurt |
Directions:
1. Grind oats into flour. Combine all ingredients. Fill muffins tins 1/2 full. Bake in 350 degree oven for 20-30 minutes, or until golden brown and firm. 2. ** I used Activia light, fatfree vanilla yogurt, so nutrition facts are a little high on calories.** |
