Ingredients:
2 hard-boiled eggs, chopped up
1 cup pumpkin flesh, steamed and diced
1 cup potato, cooked and diced
1/2 cup cucumber, diced (optional)
1/2 cup carrot, diced cooked (optional)
1/2 cup raisins (optional)
4 tablespoons mayonnaise (or to your liking)
2 tablespoons thousand island dressing
1 teaspoon dijon mustard (optional)
Directions:
1. Mix and serve.
