My family loves this pie! Ingredients:
2 apples, medium |
1/4 cup sugar |
2 teaspoons flour |
1 teaspoon lemon juice |
1/4 teaspoon cinnamon |
2 eggs, beaten |
1/8 cup solid pack pumpkin |
1 cup carnation evaporated milk |
1/2 cup sugar |
2 tablespoons butter, melted |
3/4 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1/4 teaspoon salt |
1/2 cup flour |
5 tablespoons sugar |
3 tablespoons butter |
1/3 cup pecans |
Directions:
1. Apple Layer: 2 medium apples thinly sliced 1/4 cup sugar 2 teaspoons flour 1 teaspoons lemon juice 1/4 teaspoons cinnamon Toss apple slices in the other ingredients and place on the bottom of an unbaked pie shell. 2. Pumpkin Layer: 2 eggs beaten 1 1/2 cups solid pack pumpkin 1 cup carnation milk (I used the no fat) 1/2 cup sugar 2 tbs. melted butter 3/4 teaspoons cinnamon 1/8 teaspoons nutmeg 1/4 teaspoons salt Combine all ingredients and pour over apple layer. 3. Crumble Layer: 1/2 cup flour 5 tbs. sugar 3 tbs. butter 1/3 cup pecans Combine and crumble with a pastry blender. 4. Bake at 375 for 30 minutes, then sprinkle crumble layer on top and bake another 20 minutes. Cool on a rack. |
