I found this Jello pudding/Cool Whip creation in a magazine several years ago. It's easy, easy, easy, it has 2 beautiful layers, and the flavor is terrific!
Ingredients:
4 oz. cream cheese, softened
1 c, plus 1 t milk, divided
1 t sugar
1 tub cool whip (8 oz.), thawed
1 6 oz graham cracker pie crust
1 can (15 oz. ) pumpkin
2 pkg (4 srvg size) vanilla instant pudding
1 tsp cinnamon
1/2 t ginger
1/4 t cloves
Directions:
1. Mix cream cheese, 1 T milk and sugar in large bowl with whisk until blended
2. Gently stir in half of the Cool Whip, spread into crust
3. Pour 1 C milk into lrg bowl
4. Add pumpkin, pudding mix and spices
5. Beat 2 minutes or until well blended (with whisk), mixture will be thick
6. Pour over cream cheese layer
7. Refrigerate 6 hours or overnight
8. Garnish with whipped topping
9. Refrigerate leftovers
