Recipe from a former co-worker who is a wonderful cook! Ingredients:
1 large or 2 small cans of pumpkin (not pumpkin pie mix) |
3 eggs |
1 cup sugar |
1 cup brown sugar (i like dark brown) |
1/2 cup evaporated milk |
1 tsp ground cinnamon |
1 tsp salt |
3/4 tsp ground nutmeg |
1/2 tsp ground cloves |
1 yellow cake mix (dry mix, do not prepare) |
1 bag pecans (use size you wish, i like a pound) |
1 stick butter |
Directions:
1. Beat eggs, mix with pumpkin, sugar, spices and salt in a large bowl. 2. Fold in dry cake mix. 3. Top with pecans. 4. Melt butter and drizzle over top. 5. Bake in greased 9x13 pan at 350 for 50 to 60 minutes. |
