Pumpkin Cupcakes With Maple Cream Cheese Frosting |

These are a great Autumn cupcake...Be sure to use real maple syrup. I didn't the first time I made them and it makes a difference...From Relish Magazine Ingredients:

2 1/4 cups flour |
1 tbls. baking powder |
1/2 tsp. baking soda |
1/2 tsp. salt |
1 tsp. cinnamon |
1 stick butter, softened |
1 1/3 cups brown sugar, packed |
2 eggs |
1 cup canned pumpkin |
3/4 cup milk |
3/4 cup walnuts or pecans, chopped |
frosting |
1/2 stick butter, softened |
8 oz. cream cheese, softened |
3 cups powdered sugar |
1/2 cup maple syrup |
2 tsp. vanilla extract |
Directions:
1. Preheat oven to 375 2. Line 2 muffin tins with liners 3. Sift together flour and next 4 ingredients 4. In another mixing bowl, beat butter and brown sugar until light and fluffy 5. Add eggs, 1 at a time, beating well after adding each egg 6. Add pumpkin, beating on low until combined 7. Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour until combined 8. Stir in nuts 9. Spoon batter into muffin cups, filling each about 2/3 full 10. Bake 25 minutes or so 11. Cool on baking rack 12. Frosting 13. In large mixing bowl, add all ingredients and beat until smooth 14. Spread icing onto top of cooled cupcakes |
