This can make 4 larger servings BUT it is only 6 carbs if made into 6 muffins. Ingredients:
8 oz neufchatel cheese |
1 1/4 cup egg substitute |
1 splenda quick pack no calorie sweetener pouches |
15 oz of pumpkin |
1/2 tbsp pumpkin pie spice |
1 tsp cinnamon |
Directions:
1. Combine all ingredients. Pour batter into a glass baking dish or muffin pan that has been sprayed with nonstick spray. 2. Bake in a 350oF oven until center is done - it will look 'puffed', but will shrink down as it cools. |
