The perfect combination of fall flavors, these moist, delicious muffins are sure to hit the spot! Ingredients:
2 1/2 cups all-purpose flour |
1 1/2 cups sugar |
1 tablespoon pumpkin pie spice |
1 teaspoon cinnamon |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
2 eggs, lightly beaten |
1 1/2 cups canned pumpkin |
1/2 cup applesauce |
1/4 cup vegetable oil |
1 cup craisins (or raisins) |
Directions:
1. In a large bowl, combine first seven ingredients. 2. In a separate bowl, combine eggs, pumpkin, applesauce, and oil. 3. Stir into dry ingredients just until moistened. Fold in craisins. 4. Fill 24 paper-lined muffin cups three-fourths full. 5. Bake at 350 degrees F for 20-25 minutes or until muffins test done. 6. Cool in pan 10 minutes before removing to a wire rack. |
