Pumpkin Cookies With Drizzled Glaze |

This is a great small cookie with glaze drizzled on instead of a traditional icing. This is my favorite cookie recipe and thank goodness my DH likes Chocolate Chip better. I make sure if I am making a batch of these I make a batch of Chocolate Chip for my DH so I can have the pumpkin cookies all to myself. Ingredients:
2 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
2 teaspoons ground cinnamon |
1/2 teaspoon ground nutmeg |
1/2 teaspoon ground cloves |
1/2 teaspoon salt |
1/2 cup butter, softened |
1 1/2 cups white sugar |
1 cup canned pumpkin puree |
1 egg |
1 teaspoon vanilla extract |
2 cups confectioners' sugar |
3 tablespoons milk |
1 tablespoon melted butter |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350. 2. Combine the first 7 (dry) ingredients in a bowl and set aside. 3. In a large bowl cream softened butter and white sugar. 4. Add pumpkin, egg and 1 tsp vanilla to butter mixture. 5. Beat until creamy. 6. Add dry ingredients and mix throughly. 7. Drop dough (approx tablespoon) onto a cool cookie sheet. 8. Flatten the dough slightly and bake for 12 minutes. 9. Cool on rack. 10. Make the glaze by combining confectioner's sugar, milk, melted butter and 1 tsp vanilla extract. 11. Glaze should be slightly runny. 12. Add a little more milk if necessary. 13. Drizzle glaze on cooled cookies. |
