Pumpkin Cookies Covered With Decadence |

This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. Ingredients:
1-3/4 cup shortening |
3-1/2 cups granulated sugar |
7 eggs |
1 large can pumpkin |
5 cups flour |
3-1/2 teaspoons cinnamon |
7 teaspoons baking powder |
1 teaspoon vanilla |
1 teaspoon ginger |
1 teaspoon baking soda |
1 cup chopped pecans |
frosting |
1 large package cream cheese softened |
1/2 stick butter |
3 tablespoons powdered sugar |
4 tablespoons finely chopped pecans |
Directions:
1. Combine all ingredients and beat with an electric mixer until well combined. 2. Drop by teaspoon on ungreased cookie sheets and bake at 375 for 10 minutes. 3. Combine cream cheese, butter and powdered sugar and mix until smooth. 4. Spread frosting over cooled cookies and garnish with chopped nuts. |
