This cookie is one of my kids' favorites. They are especially nice to make in cooler weather, but we still make them when the weather is warm too :) Ingredients:
2 c. brown sugar |
2 c. canned pumpkin |
1 c. oil |
2 tsp. vanilla extract |
4 c. flour (i use half white & half whole wheat) |
2 tsp. baking soda |
2 tsp. baking powder |
1 tsp. salt |
1 tsp. cinnamon |
1 tsp. nutmeg |
2 c. raisins (i prefer golden raisins) |
Directions:
1. Preheat oven to 350. Beat together sugar, pumpkin, oil, and vanilla. Add the rest of the ingredients, except the raisinsd, & blend well. Stir in raisins. Drop by spoonsfuls onto greased cookie sheet or parchment paper. Bake at 350 for 12-15 minutes. Makes about 7 dozen. |
