From The New Doubleday Cookbook - my family's favorite pumpkin cookie recipe. We like walnuts but you can add raisins, pecans or chocolate chips. Ingredients:
2 cups sifted flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/2 cup butter |
1 cup sugar |
1 teaspoon vanilla |
1 cup canned pumpkin |
1 cup chopped walnuts |
Directions:
1. Preheat oven to 375. 2. Sift flour together with soda, salt and spices and set aside. 3. Cream butter with sugar until light - add vanilla and pumpkin and mix well. 4. Slowly add dry ingredients and then stir in walnuts. 5. Drop by rounded teaspoonfuls 2 apart on a greased baking sheet and bake 15 minutes until lightly browned. 6. Transfer to wire racks to cool. |
