These are delicious cookies! I got this recipe from my Foods class. These are perfect during the fall months. Make the icing first so it is ready when the cookies come out of the oven. Ingredients:
1 cup shortening |
1 cup canned pumpkin |
1 cup sugar |
1 egg |
2 cups flour |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
3 tablespoons butter |
4 teaspoons milk |
1/2 cup brown sugar |
1 cup powdered sugar |
3/4 teaspoon vanilla |
Directions:
1. Icing (Make first):. 2. Heat the butter, milk, and brown sugar together in a saucepan until smooth and melted. 3. Let cool slightly and mix in the powdered sugar and vanilla. 4. Set aside. 5. Cookies:. 6. Cream together with a mixer the shortening, canned pumpkin, sugar, and the egg. 7. Mix in the flour, baking soda, salt, and cinnamon till smooth. 8. Drop by spoonful on a greased cookie sheet. 9. Bake in 375 degree oven for 10-12 minutes. 10. Spread the icing on the warm cookies. |
