Ever have a fall garden when you have way too much pumpkin? These cookies will take care of all those pumpkins.. A definite hit at the fall fair, Halloween parties or just because. My grand taught me to cook and bake and these cookies are one of many recipes I inherited when she passed. Hope you enjoy them as much as I do.. the house smells so nice and cozy when they are baking too! Ingredients:
1/2 cup shortening |
1 cup butter |
2 eggs, beaten |
1 cup pumpkin, packed tight |
2 cups of sifted all-purpose flour |
4 teaspoons baking powder |
1 cup raisins |
1 teaspoon salt |
2 1/2 teaspoons cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon ginger |
1 dash white pepper |
1 cup walnuts or 1 cup pecans |
Directions:
1. Cream shortening and sugar. 2. Add eggs and pumpkin. 3. Sift flour, baking powder, salt and spices together. 4. Stir in dry ingredients with the sugar and shortening mixture. 5. Add raisins and nuts. 6. bake 350 degrees for 10-15 mminutes. |
