Another recipe that is so tasty and one that is so reminiscent of Thanksgiving - just another simple recipe for this time of year!! Ingredients:
1/2 cup shortening |
1 cup granulated sugar |
if using fresh pumpkin, put through a sieve first to drain |
1 teaspoon vanilla |
1/4 teaspoon salt |
2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon ground cinnamon |
1 cup raisins |
1/2 cup nuts, chopped |
Directions:
1. In a large bowl, cream shortening and sugar together thoroughly. Stir in pumpkin, vanilla and salt. 2. Sift together flour, baking soda, baking powder and cinnamon; gradually add to the pumpkin mixture. Fold in nuts and raisins. Drop by teaspoonfuls onto greased cookie sheet. 3. Bake at 350F for 10-12 minutes, or until golden brown. |
