Yummy cake-like cookies that are amazing in the fall or anytime of year:) I got this recipe from my childhood babysitter. They are my family's favorite! Ingredients:
1 cup shortening |
2 cups sugar |
2 cups canned pumpkin puree |
2 eggs |
4 cups flour |
2 teaspoons cinnamon |
1 teaspoon salt |
2 teaspoons baking soda |
1/2 cup butter |
1 (8 ounce) package cream cheese |
1 teaspoon vanilla |
5 -6 cups powdered sugar |
Directions:
1. Cream sugar and shortening until fluffy, Add pumpkin. Add eggs one at a time. Mix until well combined. 2. Meanwhile, mix dry ingreadients together. 3. Add dry ingreadients to the wet in 3 incroments. 4. Drop cookie dough onto a parchment lined baking sheet and bake at 375 degrees for 12 minutes. 5. For the frosting:. 6. Cream butter and cream cheese together. 7. Once creamy add vanilla and powdered sugar until it reaches the right consistancy for spreading. |
