A really tasty and fairly healthy cookie. I made these for my family and friends and they loved them! Ingredients:
3/4 cup sugar |
1/2 cup brown sugar |
1 cup butter or 1 cup margarine, softened |
1 cup canned pumpkin |
1 teaspoon vanilla |
1 egg |
2 cups whole wheat flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon cinnamon |
Directions:
1. Preheat oven to 350 degrees. 2. In a large bowl, beat sugars and butter together until evenly distributed. Add pumpkin, vanilla, and egg and blend well. Slowly incorporate dry ingredients. Drop dough 2 inches apart on ungreased cookie sheets. 3. Bake for 16 minutes or until golden brown. |
