A recipe from my uncle has been much loved by my family for years. Perfect if you bought too many pumpkins at halloween! Ingredients:
1/2 cup shortening |
1 cup sugar |
1/2 cup brown sugar |
2 eggs |
1 1/2 cups fresh cooked pumpkin |
1 teaspoon lemon juice |
2 1/2 cups flour |
1/4 teaspoon ginger |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 cup nuts (optional) or 1 cup chocolate (optional) |
Directions:
1. Cream together the first 6 ingredients. Add dry ingredients and mix well. 2. Drop by the teaspoonful onto greased cookie sheets. Bake 12-15 minutes at 375°F. |
