I am not much one for pumpkin, but this recipe is delicious, and so easy, especially with a KitchenAid! Just dump it all in, let the Kitchen Aid do its thing, and then bake the cookies. Ingredients:
1 1/2 cups butter, softened |
2 cups brown sugar, packed |
1 cup sugar |
1 (15 ounce) can pumpkin |
1 egg |
1 teaspoon vanilla extract |
4 cups flour |
2 cups quick-cooking oatmeal |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1 teaspoon salt |
Directions:
1. In large misxing bowl, cream butter and sugars. 2. Beat in remaining ingredients gradually. 3. Crop by tablespoons onto ungreased baking sheets. 4. Bake at 350 degrees F for 10-12 minutes or until lightly browned. |
