Pumpkin Chocolate Chip Muffins |

Kids love these. Ingredients:
2 eggs |
3/4 cup sugar |
1/2 cup canola oil |
1 3/4 cup pumpkin (small can) |
3 cups flour (*opt one brown, two white) |
1 tsp cinnamon (can add more cinnamon, nutmeg, cloves) |
2 tsp baking powder |
2 tsp baking soda |
1 tsp salt |
1 cup mini chocolate chipits |
Directions:
1. Beat eggs slightly. 2. Add sugar, oil, umpkin and beat thoroughlky. 3. Add dry ingredients and mix until just mixed. Stir in chocolate chips. Use ice cream scoop to measure into non stick muffin pan or into greased tins. 4. Bake 350* for 15-20 minutes, until toothpic comes out clean. Watch carefully as pumpkin likes to burn. 5. Remove from tins immediately. |
