Pumpkin Chocolate Chip Bread |

This is one of my husband's favorite things to have around the holiday's. The recipe is from my mother in law's kitchen. Ingredients:
1 cup sugar |
1/2 cup brown sugar |
1 cup canned pumpkin |
1/2 cup oil (i use light olive oil) |
2 eggs |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon nutmeg |
1/2 teaspoon cinnamon |
1/4 teaspoon ginger |
2 cups flour |
12 ounces chocolate chips |
1/2 cup walnuts, chopped |
Directions:
1. Combine first 10 ingredients until blended. 2. Add flour mix well. 3. Stir in chocolate chips and walnuts. 4. Spoon into well oiled 9 x5 x3 loaf pan. *. 5. Bake at 350 degrees for 65 -75 minutes or until done when tested. 6. * Or 1 batch = 4 mini loaves. Bake mini loafs 45 minutes. |
