Ingredients:
4 eggs |
2 cup(s) sugar |
1 can(s) pumpkin |
1 1/2 cup(s) vegetable oil |
3 cup(s) flour |
2 teaspoon(s) baking soda |
2 teaspoon(s) baking powder |
1 teaspoon(s) cinnamon |
1 teaspoon(s) salt |
2 cup(s) semi-sweet chocolate chips |
Directions:
1. ) In large bowl, beat eggs, sugar, pumpkin, and oil until smooth. 2. ) Mix dry ingredients and add to pumpkin mixture. (don't over mix!) 3. ) Fold in chocolate chips 4. ) Fill greased or paper lined muffin cups 3/4 full. 5. ) Bake at 400 degrees for 16-20 minutes or until muffins test done (bounce back test to touch.) 6. ) Cool in pan for 10 minutes before removing to a wire rack. 7. yield: 24 muffins |
