My daughter-in-law gave me this recipe which we all love. To make this pie really quickly, use frozen pie shells. Ingredients:
2 egg yolks |
1/2 c brown sugar |
1 c cooked pumpkin |
1/2 c milk |
1/2 tsp salt |
1 tbsp (envelope) gelatin |
1/4 c cold water |
1/2 tsp ginger |
1 tsp cinnamon |
1/2 tsp nutmeg |
2 egg whites, beaten stiff |
1/2 c white sugar |
Directions:
1. Beat egg yolks and brown sugar until thick. Add pumpkin, milk, salt, and spices. Cook on stove until thick. Remove from heat. 2. Soften gelatin in cold water. Stir into the hot mixture. 3. Beat egg whites until stiff and add white sugar until very stiff. Fold into pumpkin. 4. Pour into cooled and baked shells and chill. |
