This is a must try. Even people who do not like pumpkin pie usually like this. My kids can almost eat the whole pan (probaly would if I let them). Ingredients:
crust |
2 c all purpose flour |
11/2 cubes butter |
1/2 c brown sugar |
1 c chopped walnuts or pecans |
filling |
2 - 8oz cream cheese (softened) |
1 1/2 c sugar |
2 tsp allspice |
1 tsp vanilla |
4 eggs |
3 tsp cinnamon |
1 c pumpkin |
Directions:
1. Crust 2. Combine flour, brown sugar, and butter in a bowl. 3. Mix together until crumbly 4. Mix in nuts 5. Take out 1 C and set aside 6. Press remaining mixture in the bottom of a 9x13 baking dish. 7. Bake at 350 degrees for 8 minutes 8. Filling 9. In a mixing bowl cream together cream cheese, sugar and vanilla. 10. Mix until very smooth 11. add eggs, pumpkin, allspice and cinnamon. 12. mix well 13. Pour over baked crust. 14. sprinkle topping that was set aside over the top 15. bake at 350 for 30 min 16. It will be jiggly when done but it will set up as it cools. 17. do not overcook. |
