A different take on the pumpkin cheesecake Ingredients:
1 pie shell, premade |
1 cup low fat cottage cheese |
4 ounces neufchatel cheese |
1/2 cup sugar |
1/2 cup canned pumpkin puree |
3 tablespoons flour |
1 teaspoon vanilla |
1 teaspoon pumpkin pie spice |
2 eggs |
Directions:
1. Preheat oven to 325°F 2. Puree ingredients, except eggs, until smooth. Pour into a large bowl. Slightly beat eggs and gently fold into mixture. Pour mixture into pie crust and bake 50 minutes or until center is firm. |
