This is a great pie to try if you are getting tired of the traditional 'pumpkin pie' or 'cheesecake'!! Why not combine the two!! I've been told it is like a little taste of heaven !! Ingredients:
2 (8oz) pks of cream cheese, softened |
1/2 cup pumpkin |
1/2 cup sugar |
splash vanilla |
dash cinnamon |
2 eggs |
1 graham cracker crust (or you could make your own) |
Directions:
1. Preheat oven to 350 2. With an electric blender cream together cream cheese, pumpkin, sugar, vanilla, and cinnamon until well blended 3. Add eggs and mix until well blended 4. Pour into crust 5. Bake 40 minutes or until almost set 6. Allow to cool at room temperature 7. Then cover and put in fridge at least 3 hours, but overnight is best 8. **Serve with whip cream and chocolate dipped pecans** 9. ***To avoid cracking: while the oven is preheating place a 13x9 baking dish full of water on bottom rack of oven. Leave it in until pie is done*** |
