A savory pumpkin preparation from Southern France. Ingredients:
28 oz (800 g) peeled and seeded pumpkin (or any firm-fleshed winter squash), cut in small cubes |
4 garlic cloves, finely chopped |
1 small bunch parsley, finely chopped |
1 tbs tresh thyme leaves |
1.7 oz (50 g) all purpose flour |
1.7 oz (50 g) gruyere, grated |
salt |
black pepper |
nutmeg |
4 tbs breadcrumbs |
1/2 cup (125 ml) extra-virgin olive oil |
Directions:
1. Position a rack in the lower part of the oven. 2. Preheat oven to 350º F (180º C). 3. Mix parsley, garlic, thyme, flour, and gruyere in a big bowl. 4. Add pumpkin and mix well. 5. Season with salt, pepper and nutmeg. 6. Coat a gratin pan with olive oil, fill with pumpkin mixture, sprinkle with the breadcrumbs. 7. Drizzle with the olive oil. 8. Bake for 60 min. |
