I made this for thanksgiving and everybody loved it!!!! BEFORE YOU PUT THE MIX IN THE BAKING DISH WHIRL IT AROUND IN THE BLENDER FIRST SO WHEN IT COMES OUT OF THE OVEN IT WILL BE SO SMOOTH. A great comfort food for those cold winter days.
Ingredients:
2 cups pumpkin puree (100% pure)
1 cup evaporated milk
1 cup white sugar
1/2 cup self-rising flour
2 eggs
1 teaspoon vanilla extract
1/2 cup butter or 1/2 cup margarine
1 pinch ground cinnamon
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Combine the pumpkin, evaporated milk, sugar, flour, eggs, vanilla, melted butter and ground cinnamon to taste. Pour into a casserole dish.
3. Bake at 350 degrees F (175 degrees C) for 1 hour.
