This is the only cake I make from scratch It is a Very good hardty cake. A real crowd pleaser. Enjoy!! Ingredients:
4 eggs |
1 2/3 cups sugar |
2 teaspoons vanilla |
1 cup oil |
2 cups canned pumpkin |
1 cup flour |
1 cup whole wheat pastry flour |
1 teaspoon baking soda |
2 teaspoons baking powder |
2 teaspoons pumpkin pie spice |
1 teaspoon salt |
1/2 teaspoon cinnamon |
1 cup raisins |
1 cup nuts |
13 ounces cream cheese |
1/2 cup soft butter |
1 teaspoon vanilla |
2 cups powdered sugar |
Directions:
1. Beat together eggs,Sugar,Vanilla,oil & pumpkin. 2. Add dry ingredients and mix well. 3. Fold in raisins and nuts. 4. Bake in a lightly oiled 9x12 pan 5. 350 25-30 Minutes or until a tooth pick inserted into center comes out clean. 6. Let cool before Frosting. 7. Frosting: beat together: cream cheese, soft butter, vanilla. 8. add powdered sugar, if too stiff add a little milk. |
