makes a nice hostess gift or thank you at the holidays. although I haven't made it yet, I was told it was really good. Made in canning jars. Ingredients:
2/3 cvegetable shortening |
2 2/3 c sugar |
4 eggs |
2 c canned pumpkin |
23 c water |
3 1/3 c all purpose flour |
1/2 t baking powder |
1 1/2 t salt |
1 t each....cloves, allspice, cinnamon |
2 t baking soda |
1 c walnuts |
Directions:
1. 325 degree oven 2. grease 8 wide-mouth pint jars 3. cream shortening and sugar 4. beat i n eggs, pumpkin and water 5. sift flour, baking powder,salt, spices,and baking soda. 6. add to pumpkin mixture and stir well 7. stir in nuts 8. pour into jars, filling 1/2 full 9. set jars on a baking sheet, bake about 45 min till done. 10. cool slightly while still warm, place waxed paper on top and place lid on jar. 11. cakes will slide right out once they are cool. |
