From Southern Living magazine. Ingredients:
2 cups sugar |
2 cups all-purpose flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 teaspoons ground cinnamon |
3/4 cup corn oil |
2 cups cooked mashed pumpkin or 1 (16 ounce) can pumpkin |
4 eggs |
1 (3 ounce) package cream cheese, softened |
6 tablespoons margarine, softened |
1 tablespoon orange juice |
1 teaspoon vanilla |
1 3/4 cups sifted powdered sugar |
Directions:
1. Combine first 6 ingredients. 2. Add oil, pumpkin and eggs; beat 1 minute at medium speed of electric mixer. 3. Spoon batter into a greased 15x10x1 inch jellyroll pan. 4. Bake at 350 degrees for 20 to 25 minutes. 5. Cool completely; frost with Fluffy cream cheese frosting. 6. Cut into bars. 7. Fluffy cream cheese frosting: Beat cream cheese and margarine until light and fluffy; add orange juice and vanilla and mix well. 8. Gradually add powdered sugar, mixing until light and fluffy. |
